Impossible Coconut Custard Pie

1/2 cup Bisquick Mix
3/4 cup sugar
2 cups milk
3 1/2 ounces coconut
1 tablespoon vanilla
1 tablespoon softened butter

Combine all ingredients and mix well in a  blender.
Pour into a greased, 9 inch pie pan.
Bake at 400 degrees for 25 tp 30  minutes or until a knife inserted into the center comes out clean.

This is a great pie. The Bisquick in the mix sinks to the bottom and creates the bottom crust.  The coconut rises to the top and creates the top crust.

Impossible pies are quick and easy recipes. You don't make a pie crust, the Bisquick in the recipe sinks to the bottom as it cooks, and creates its own crust.
